Carbonara con carciofi - Carbonara with artichokes

The Italian cuisine is rich of traditional pasta dishes, with carbonara definitely being one of those. However this variant of the standard carbonara recipe is a lighter version of this classic dish and ideal for potential vegetarian guests. The carbonara recipe is originally roman, but it has now become one of the most widespread national and international Italian dishes.

The Italian version
Ingredienti:
spaghetti 400g
carciofi 500g
3 uova
2 bicchieri d’acqua
5 cucchiai di parmigiano grattugiato
1 spicchio d’aglio
Prezzemolo
Pepe nero
Olio extra vergine d’oliva

Dopo aver lavato i carciofi poneteli in un tegame dai bordi alti. Aggiungete lo spicchio d’aglio, il prezzemolo, l’acqua, il sale e l’olio. Fate cuocere a fiamma media e, se necessario, aggiungere altra acqua. Fate addensare e rosolare leggermente. Portate ad ebollizione l’acqua, salate e cuocete gli spaghetti. Nel frattempo rompete le uova in una ciotolina, aggiungete un pizzico di sale e pepe nero e sbattete leggermente. Infine aggiungete il parmigiano. Scolate la pasta e versate nuovamente nella pentola di cottura. Unite i carciofini, l’uovo con il parmigiano e mantecate per pochi secondi a fiamma media.

The English Translation
Ingredients:
spaghetti 400g
artichokes 500g
3 eggs
2 cups of water
5 spoons of grated parmesan
1 garlic clove
Parsley
Black pepper
Extra virgin olive oil

Wash the artichokes and put them in a high rim pan. Add the garlic clove, parsley, water, salt and oil. Cook on a medium flame and add more water if necessary. Leave until thicker, then brown lightly. Bring the water to the boil, add the salt and cook the spaghetti. In the meantime break the eggs in a small bowl, add a pinch of salt and black pepper and beat slightly. Then add the parmesan. Drain the pasta and pour in the cooking pot again. Then add the artichokes, the eggs with the parmesan and stir for a few seconds on a medium flame.
