Involtini di melanzana (Aubergine rolls)

English Translation
Ingredients for 4 people
2 long aubergines
300 gr of cherry tomatoes
basil
dry oregano
250 gr of buffalo mozzarella
extra virgin olive oil
salt
pepper

  1. 1) Wash and cut the cherry tomatoes in half lengthwise and place in an oven tray with the cut side facing upwards. Garnish with oil, salt and dry oregano. Place the tray in the oven at a minimum temperature (50º-60ºC) for about 2 hours.
  2. 2) Cut the mozzarella in sticks and strain on some kitchen roll. Wash the aubergines, remove the stalks and cut lengthwise into 1 cm thick slices. Heat up some oil in a non-stick pan and brown a few aubergine slices at a time by cooking them 1-2 minutes per side. Each time add some more oil. Then garnish with salt and pepper. Place the mozzarella in a bowl and garnish with a little oil, salt and pepper.
  3. Cover the aubergine slices with the mozzarella sticks and the cherry tomatoes. Add 1 basil leaf and roll up. Cook the rolls in a preheated oven at 200º for 3-4 minutes, garnish with oil and serve.

Ingredienti per 4 persone
2 melanzane lunghe
300 gr di pomodorini
basilico
origano secco
250 gr di mozzarella di bufala
olio extra vergine di oliva
sale
pepe

  1. 1) Lavate i pomodorini, tagliateli a metà nel senso della lunghezza e metteteli in una pirofila con la parte tagliata rivolta verso l’alto. Condite con olio, sale ed origano secco. Disponete la pirofila in forno al minimo (50º-60ºC) per circa 2 ore.
  2. 2) Tagliate la mozzarella a bastoncini e lasciatela sgocciolare su carta da cucina. Lavate le melanzane, eliminate le estremità e tagliatele nel senso della lunghezza a fette di circa 1 cm di spessore. Scaldate poco olio in una padella antiaderente e fate dorare poche fette di melanzana per volta, cuocendole 1-2 minuti per lato. Ogni volta aggiungete un filo d’olio. Spolverizzate con sale e pepe. Trasferite la mozzarella in una ciotola e conditela con poco olio, sale e pepe.
  3. 3) Coprite le fette di melanzana con la mozzarella a bastoncini ed i pomodorini. Aggiungete 1 foglia di basilico e arrotolate. Cuocete gli involtini in forno preriscaldato a 200º per 3-4 minuti, irrorate con un filo d’olio e servite.
