Ingredients for 4 people
6 mackerels cut into fillets
2 carrots
2 celery sticks
1 golden onion
1 clove of garlic
1 untreated lemon
2 tablespoons of tomato concentrate
1 tablespoon of white vinegar
extra virgin olive oil
salt

  1. Fill up a pot 4 fingers deep with water, add vinegar, a pinch of salt and cook the mackerel fillets for one minute when the water starts boiling. Then strain and let cool down.
  2. Clean and wash the celery, the carrots and the onion and chop finely together with the garlic clove and the zest of half a lemon. Heat up 5-6 tablespoons of oil in a pan, add the chopped ingredients and stew for about 10 minutes.
  3. Add the tomato concentrate and two ladles of boiling water, sprinkle some salt, cover and cook for about 30 minutes. Liquidize with an immersion blender and add the lemon juice. Pour the sauce over the mackerel fillets and let cool down. Serve with a few celery or parsley leaves on top.

2 costole di sedano
1 cipolla bionda
1 spicchio d'aglio
1 limone non trattato
2 cucchiai di concentrato di pomodoro
1 cucchiaio di aceto bianco
olio extra vergine di oliva
sale

  1. Versate 4 dita di acqua in una casseruola, unite l'aceto, un pizzico di sale e lessate i filetti di sgombro per un minuto dall'inizio dell'ebollizione. Poi scolateli e lasciateli raffreddare.
  2. Mondate e lavate sedano, carote e cipolla, tritateli finemente con l'aglio e la scorza di mezzo limone. Scaldate 5-6 cucchiai d'olio in una casseruola, unite il trito e lasciatelo stufare per una decina di minuti.
  3. Aggiungete il concentrato di pomodoro e due mestoli di acqua bollente, aggiungete del sale, coprite e lasciate cuocere la salsa per circa 30 minuti. Frullatela con un mixer ad immersione e unite il succo di limone. Versate la salsa sui filetti di sgombro e lasciateli raffreddare. Cospargete con qualche foglia di sedano o prezzemolo e servite.
